I get recipes from a Yahoo list called Camping and Cowboy Cooking.  They send out a recipe every day!!

I've also looked at books from the library and list a few good ones here.  

I will put some recipes here when I've actually tried then and liked them!

Today (Aug 14) I cooked some Chicken Quarters in my Dutch oven.  These are about the cheapest chicken meat you can buy -- sometimes as cheap as 25 cents a pound -- but you have to buy ten pounds, thaw them, and repackage.  

BASIC Chicken Quarters

Oil

2, 3, 4 Chicken Quarters

Pepper

1/2 Cup Coarsely Chopped Onions

2-3 Garlic Cloves, crushed & chopped

Chicken Granules

1-2 cups water

 

Pepper quarters and brown both sides.  Remove from pot.

Saute onions until soft (starting to caramelize) and add Garlics

Add Broth -- made from Chicken Granules and Water (1 tsp per cup.)

Return chicken to pot and cook until chicken is done (fork runs thru it cleanly & easily)   Less than 2 hours.

 

At this point you can remove some quarters and save for other chicken meat recipes.

Use this cooked chicken -- and the onions -- for :

Chicken Cacciatore  or

Belizean Stewed Chicken 

 

Each quarter will serve one or two people.
