Huevos Ranchers (Ranch Eggs)

This is the classic Mexican breakfast!  I've made three trips thru Mexico, asking for this breakfast every morning.  Every morning, in a different place, it's prepared differently, and it's ALWAYS good!!

Last Friday, the kids at the Church had a Taco NIght, and they had all sorts of ingredients left.  Taco meat, refried beans, cheese, Pace Picante Sauce, chopped lettuce and tomatoes.  I chopped some onions, and set all the ingredients out so that the cowboys could make their own.  

Everyone made theirs differently but they all said it was wonderful!   There was a Construction Diagram on the table, and photographs from my other website

The recipe is here.    The change is that I used Heated Salsa instead of Chili for a topping; had three varieties:  Hot Red, Mild Red and Green.  (Picture below)  Nobody tried the green!!

(I cooked the mild red from tomato sauce, onions & bell peppers.)
