The Basis for Breakfast Hash

I subscribe to a list called "Camping and Cowboy Cooking" and they publish a new recipe every day.  These recipes became the basis for my killer Breakfast Hash!

Campfire Skillet Breakfast 

1/2 pound sliced bacon 
4 cups potatoes, peeled and cubed 
1/2 onion, chopped (optional) 
6 eggs, beaten 
1 cup shredded Cheddar cheese

Cook bacon to desired doneness in a cast iron skillet over the slow burning coals of a campfire. Remove bacon from the skillet and set aside. Stir the potatoes and onion into the hot bacon fat. Cover, and cook until the potatoes are soft, about 10 to 12 minutes. 
Crumble the bacon into the potatoes. Stir in the eggs, cover, and cook until set through, about 2 minutes. Sprinkle with the cheese, and allow to melt before serving.

1 Lb. Bacon

1 Dozen Eggs

1 Pkg. Frozen Shredded Potatoes

8 Oz. Shredded Cheddar Cheese

Salt and Pepper

Directions:
I use an electric frying pan but you can cook it in a regular pan. Brown bacon, drain some of the grease and leave some for cooking potatoes. Crumble bacon when done, leave in pan and add onions, peppers, tomatoes, etc. Cook potatoes till done, add salt and pepper. Break eggs on top of potatoes, put lid on pan. Cook eggs (fried) till done. Sprinkle with cheese until it melts. Cut a wedge, serve with toast. One pan clean up.

Comments:
This recipe can feed up to a dozen people at once. Great for a camping breakfast.
