This dish is based upon two recipes I picked up off the internet.  See them here.

 

Oil

1 Lb. Thin Sliced Bacon

8 Medium White Potatoes

4 TBSP Butter or Margarine

2 Doz. Eggs

4 to 8 Oz. Cheese (cheddar preferred) 

 

Scrub and parboil potatoes until skin scrapes off easily.  (like a scab) Cool.

Oil a pan.  Cut bacon pack in half, and fry all together in the pan, stirring often, until bacon is golden brown.  (see picture)

Drain bacon on towel or paper towel and crumble into 1/2 inch pieces.   Easier to do with your hands than with a knife!

 

Use a 'knuckle-buster' (box grater) and grate all potatoes into shreds.  Divide bacon grease into two parts in two pots. (I'm using 4-6 qt. Dutch ovens . (see picture)   Fry potatoes, stirring often to avoid burning, until half of the shreds are brown.  Add bacon bits and stir thoroughly to heat everything.  

 

Beat eggs, a dozen at a time, with a couple of shots of water, until they are thoroughly mixed.  Add each dozen eggs to a pot.  Reduce heat, continue to stir until eggs are cooked.  Grate cheese over mixture and serve.  

 

Encourage the use of hot sauce to add flavor!!

 

Makes two pots of eggs, serves -- 10-20?   Maybe not.  It's really good!!
