Most western cooking is pretty pedestrian fare, but some is better known.  Of course, the "Cowboy Way" is to make an event out of it.  

Chuckwagon Cooking

The most famous western food... meat, beans, potatoes, bread and... biscuits & gravy!!!  Look here for recipes, books and  links.   I have a chuckwagon "setup" (an indoor version) and will be cooking chuckwagon breakfasts at the Tombstone Cowboy Church for a while... to try out my recipes. Steak Houses and Steaks

When the cowboys ran out of "eastern food" (canned stuff), they had to eat <gasp> steak.  So, most of the best steakhouses originated in the West or <gasp> Australia!!!  The key phrase is "Chuckwagon Suppers"  Look here.
