Ingredient. Of course, Hatch is the world-famous home of New Mexico chilies,
and they have a similar product.

I offered to get him an apron and he said he already has one, with his name
on it!!
On the right. my big pan (yes... it's a chinese wok!!)
I
needed a big pan to fry tortilla chips in, and this is dandy. You can push
the chips up out of the hot oil as they cook!
Use plenty of oil to fry the chips and then drain out before you add the
Ro-Tel.
