Rick's Breakfast BlogI'm cooking breakfast for a group of hungry folks at the Tombstone Cowboy Church. Here's a log of my experiences. June 7 Scrambled Eggs & Fried Bread. I didn't bring enuf eggs; bread (recipe here) turned out GOOD! Be sure to start early and make enuf for everyone! June 14 Breakfast Burritos. The recipe is here. It was really successful. Noted that everyone wants it a little different, No onions, no mayo, etc. My square grill (about 10") is a pretty good comal on the Colman stove. Smothered the burritos with Green Chili.(made ahead of time.) Some people just ate a little bowl of Chili! June 21 Breakfast Scramble. This is a pount of pork sausage, crumbled, and a dozen eggs scrambled into it. The sausage takes forever to brown! (It's "gray" in ten minutes, takes another hour to brown. (I started at 5:30 browning the sausage.) With this much sausage, you could easily scramble two dozen eggs. June 28 Sausage, Scrambled Eggs. The church acquired one of those roller hot dog cookers so I thought I'd do breakfast sausage on it. Well, I meant to get brown & serve sausages -- got raw sausages and it took an HOUR to cook them. And almost an hour to clean up the cooker on Monday!! They've hidden the cooker from me so I won't use it again. July 5 French Toast. This is "Texas Toast" bread (really thick, square slices) dipped in a milk/egg mix and fried on the grill. (I brought in my old electric grill and set it on the stove.) Don't put salt or sugar in the mix. (Watch for diet restrictions, eh?) Serve with syrup -- be sure you have some Sugar Free Syrup (which is quite good.) July 12 Pancakes. Krusteaz® Buttermilk Pancake Mix makes this simple. Just add water -- not too much -- keep it thick, for thicker pancakes. Be sure you have a whisk to get the mix smooooooth! I brought in my grill again, and it pooped out after a while. You need a HOT griddle for pancakes. I will buy a new one before I do that again. July 19 Chicken 'n' Biscuits. (Pix Here) Boy, did I learn a lot here. Mixed Bisquick and water to make dough -- too sticky to roll, so I had to drop biscuits in pan. (Recipe calls for milk, but water is just FINE!) First time I've used the oven -- put the shelf in the middle, and the first batch almost burned on the bottom. Put the shelf up high. Biscuits will bake but may not be brown on top! I didn't make nearly enuf gravy -- it was gone in a flash. (Recipe here.) Drop biscuits are good, but don't look so good! I should make lots and lots, have jelly and syrup in addition to gravy. (Hint: cold, leftover biscuits are good!! They are tender; don't dry out if they're left out for a while. July 26. Chilaquilles & Scrambled Eggs. (Pix here) This is a wonderful dish... recipe here. Discussion here. I used my wok to cook in -- burned a lot of the chips trying to brown them, I decided that the oil wasn't deep enuf. Anyway, I threw those away. I used a Hatch copy of RoTel and I think it was less hot. The dish is very simple and very yummy. I was afraid that some people wouldn't want it because it was "hot" and so I also scrambled a dozen eggs. Had a lot of them left over, just because we didn't have a big crowd at the church today. August 2. Breakfast Hash. (Pix here) This is very simple, if you don't burn the bacon!! Recipe here. I will do this one again and again. August 9. Egg Sandwiches. This would be a lot easier if I still had the grill I had in Belize. Alas, it is still in Belize. I used a smaller square one, which really doesn't have enuf room to flip eggs (or anything else. About the Sandwiches. I have a Pam-type spray to keep the grill lubricated. I buy regular buns because they're a lot cheaper, and medium eggs, which are often on sale. I break the yolk and put in some chopped onions before I flip the egg.I have two plates, labeled "Onions" and "No Onions." and I try to keep a little ahead of the orders. I have "imitation cheese" slices to put on the sandwich if they like. About twice as many people want onions. August 16. Biscuits, Sausage Gravy & Sausage Brown & serve sausage patties. A nice product!! Jacob cut 4 of them up into little pieces and he browned them in the Dutch Oven. Took them out, we made roux and added milk & broth to make a nice gravy. (Don't forget to put those browned pieces back in!. That was the successful part. The Coleman oven (see here) is a bear to use. It should be 400 degrees -- hard to keep that. It took a lot of burned-on-the-bottom biscuits to discover that you have to use the very highest slot for the wire grill inside. And you should fasten it in place so that it doesn't fall, and dump your biscuits on the red hot bottom of the oven!!! Oh, well, not really burned, just very very brown. <hee, hee> August 23. Huevos Rancheros! The classic Mexican Breakfast. Lots of details here. August 30. Pancakes and Waffles. Krusteze is the key! I used my Coleman grill, (still too hot on one side), and a nifty Belizean Waffle maker. (pix here) It's pretty hot, will make a big or little waffle in 2 minutes or less. I buttered them and stacked them on a plate with foil and a towel over them. Fried eggs to order. Most people want a waffle... pancakes were second choice. But heck, waffles are ELEGANT, eh? September 6. Chilaquilles Again!! Sadly, these look "Strange" and people are slow to take a helping. I made plenty (two pots full) and took a pot home. Those who tried them exclaimed about how wonderful they were, and even took seconds, but I probably won't make them again. September 13. Sausage Biscuits and Gravy... Back by popular demand. Biscuits are ready made, oversized, hard to bake in the Coleman oven! Sausage gravy is a snap -- I used a half-point of ground sausage, browned it first thing, and turned it into gravy. September 20. Egg Sandwiches The grill (Martha Stewart model) is not very satisfactory... it overheats in the middle, because of the HOT HOT Coleman middle burner... leaves me a limited cooking space!! I mince onions, cook eggs with onions or without (put them on labeled places) and let folks decorate their own sandwich. I have cheap chese slices, and they can put them on, or I will add and melt while I cook Diner food, eh? September 27. Texas French Toast. Get Texas bread, dip in egg wash (1./4 cup milk to 3 eggs) and brown nicely. Serve with syrup or <surprise> orange marmalade!! Bulletin. Bought a new Presto Electric Grill ($20 @ Wally World) and my troubles are over!!! October 4. Breakfast Hash. Cook this in Dutch ovens. (two of them.) This time I used brown & serve links, cut into 1/4" pieces. Brown these, add parboiled potato shreds, brown, and add beaten eggs. (I used 8-10 eggs to a pot.) I was done with this by 8:30 and it was well received. October 11. Extravaganza!! Eggs-in-the-nest (recipe here) Pancakes (use Krusteze for sure success) and Deep Fried Twinkies and Blueberry Muffins. (recipe here) All very easy with my new Presto grill!!
